Years ago in Ukraine. I found an out of print book about the life of Aesop. It was in Russian, but was simple enough that I was able to understand it at my level of language comprehension. In hindsight, I now understand it was complete fiction.

Update. I just processed and seasoned BOTH roasts! I deboned them and cleaned off the silver skin. So now they look like two modest roasts. Not as marbled as I like, but the sous vide bath will make them perfectly tender. I’ll roast the leftover rib racks in the oven, or I might fry them in beef fat

I don’t have one! I’ve been in Savannah 18 years and I have yet to make a casserole Mac better than literally anyone. I even tried Sodium Citrate and it just made it taste like velveeta Mac.

Follow up. I bought the extra roast. 11lbs total. I have a few hours before I start dry brining. I still haven’t decided if I want to cook both or freeze one. Either way. Sous vide for five hours and then kissed with old bay compound butter and a flame thrower.
