Ingredients clockwise from top of a plastic container with dry rice vermicelli, a bowl of sliced shiitake mushroom, a small plate with soybean paste & ginger matchsticks, a small dish with sliced red chilli, a chopping board with choysum cut into pieces, a small bowl of mock abalone (fried gluten). Dinner as described served on a round white soup plate. A pair of wooden chopsticks lie atop the plate on a diagonal & a small dish of red chilli in soy sauce perches on them.

I didn't make these recently, but here's some vegan sushi. I just make a bunch of tofu and vegetables using different preparations - fresh, pickled, marinated, broiled, etc - and roll them up in different combinations. There are tons of vegan sushi ideas and recipes online!
