The only part of GT that isn't painfully mediocre at best and godawful at worst is the last ten minutes. In part because those last ten minutes mean that GT is *over.*

Pan is frustratingly useless, Trunks is a boring non-character half the time, and the individual stories of the first arc range from charming but derivative to dull.

Most people just hate Dragon Ball GT because they are told it is the accepted position. They know they need to think that & circle back with excuses which reach that end point. There are many who can articulate genuine problems but many more whose dislike seems forced and hollow.
