After another half hour of fiddling: success! Seems I had gotten stuck on which elements in the container hierarchy actually needed the vertical setting set to "center" vs "fill".

After another half hour of fiddling: success! Seems I had gotten stuck on which elements in the container hierarchy actually needed the vertical setting set to "center" vs "fill".
No - seriously - why is vertical centering so finicky?? In the end the answer will always be "user error" because I didn't set the Correct Property to the Correct Value; so I guess this is really a rant about the docs more than engine itself.
