Roasted beets with shredded radicchio, chopped hazelnuts, pomegranate and raisins. Top with a bit of crumbled feta and you have a red salad that’s sweet, salty, crunchy, with a hint of bitter all in the same mouthful. With a slice of homemade GF cornbread to round it off.
