I got it to work, two quarts of coffee to deglaze and an espresso pod in the sachet. Also a fistful of ancho. Topped with crema, olive oil, and parsley. Pretty solid

It was good but came out ugly. Macerated serranos in a cabbage slaw for fish tacos is the way to go though, that’s staying for sure in the next attempt

I’ll probably do this next time and if that doesn’t work I’ll do the espresso crema and if I don’t like that I’m down with trying to make it work lol

Maybe I completely cover the mirepoix in ancho and then roast the hell out of it and also put a sachet of espresso grounds in the soup and let it simmer for like 2 hours, basically brewing the coffee into the soup
