I got it to work, two quarts of coffee to deglaze and an espresso pod in the sachet. Also a fistful of ancho. Topped with crema, olive oil, and parsley. Pretty solid

Maybe I completely cover the mirepoix in ancho and then roast the hell out of it and also put a sachet of espresso grounds in the soup and let it simmer for like 2 hours, basically brewing the coffee into the soup

I keep trying to make an ancho coffee tomato soup but every time most of the coffee flavor gets washed out when I blend it. Either going to put an entire pot of coffee in next time to deglaze and let it cook down or I’m just going to make an ancho tomato soup and top it with an espresso crema
