BROTHY MUSHROOM SOUP 4-6 bowls (depending on the size of your bowl!) 60-90 min This is a nice garlicky mushroom soup that is nice to eat with a buttered slice of sourdough toast INGREDIENTS Butter (roughly 1/4 cup) Garlic (lots) Onion Mushrooms (a couple containers) Chicken or Veggie stock (1L carton) Salt/Pepper Wine (a splash) Parsley/Rosemary/Thyme/Bay Leaf* Lemon juice or Tomato paste Parmesan (a sprinkle) 1. Throw a chunk of butter (I don't know, a few tablespoons or something) into a pot with a chopped onion and a few cloves of minced garlic on low heat. 2. Let that simmer on low for a while. In the meantime, cut up a couple little containers of mushrooms (I used crimini but regular ol' white button mushrooms are great), maybe unload your dishwasher or give your floor a quick sweep. 3. Toss in your mushrooms, and heck, some more butter, why not? The mushrooms are just gonna soak it all up anyway. Maybe some more garlic, too. Maybe some green onions if you have some you want to get rid of. It don't matter none. 4. Let that simmer on medium heat until the mushrooms are soft. If you have it, throwing in a splash of wine would be delicious. White or red, it doesn't matter. Season with some salt and pepper. 5. Dump in about a litre of chicken or vegetable stock, then season with more salt, pepper, and maybe some rosemary, parsley, thyme.. All good options. I also recommend a few drops of lemon juice or maybe a little spoonful of tomato paste. Taste it before and after adding each ingredient to see how it's coming along and try to balance as you go. 6. Shucks, add another pinch of garlic powder. A sprinkle of parmesan can be good too. 7. Simmer until you get impatient, and then put it in your mouth hole. *I recently tried it with Tarragon because my Mother-in-Law's yard is being consumed by her wildly successful tarragon bush and wouldn't you know it, it was GREAT. Highly recommend. a bunch of retro-style duotone illustrated mushroom soup ingredients Lemon, wine, and tomato are acids. They help brighten flavours that are too heavy, rich, or dull. They'll help cut through the butter and mushroom! Tip: If you're trying to decide if a spice or herb will work in a dish, swish around some of what you're trying to season in your mouth while smelling the spice/herb. Smell and taste are linked so while it won't tell you what it will taste like exactly, you'll be able to get a sense of if it "goes" or not.

illustration of borscht ingredients BORSCHT INGREDIENTS 3-4 medium-sized Beets, slivered or grated 1-2 Carrots, diced or slivered 1 Onion Garlic (some) 1-2 diced potatoes (if you want) 2 cups cabbage and/or beet stems and leaves 28 oz can of crushed or diced tomatoes *Broth (enough to cover with about an inch or so of headspace) Salt and Pepper Dill (fresh if possible! Fern, not heads) Whipping cream (optional) Sour cream ("optional") 1. Cut up all your veggies. While grating/ hopping beets, use a glove if you don t wan o look like you just murdered a man for fur If using beet greens, chop up your stems to simmer (they're tougher) and save the more delicate leaves to add closer to the end. 2. Briefly sautée your onion, garlic, ano carrot in the pot in a bit of oil or butter until slightly tender and brown. 3. Add beets, potatoes (if using), cabbage and/ or beet stems, broth, and tomatoes (and ribs, if using). 4. Simmer on low, covered, about a half hour. Taste and season with salt, pepper, and either lemon/vinegar or sugar accordingly. 5. Add dill and beet leaves, simmer for another half hour. 6. At very end, add 1 cup whipping cream (optional-I usually don't for lactose reasons but it is very good). Chives or green onions are also very tasty. Do not boil after adding the cream-it will split and you'll have little cream chunks floating around your veggies, and if I can help someone avoid thinking the phrase "cream chunks" ever again, I consider that a victory for humanity. 7. Serve with a dollop of sour cream. POSSIBLY: lemon juice or vinegar if too sweet, sugar if too tart/acidic All depends on how sweet your beets are! *If you want: make a stock out of pork short ribs (see Chicken Noodle Soup recipe for broth-making guidelines) and then add the pork meat to the soup later on. Otherwise, just use some vegetable or beef bouillon and enough water to cover your ingredients with about an inch or so of broth, or a couple cans of broth + water!

illustrated root vegetables around the border ROASTED VEGGIES WITH TAHINI SAUCE as much as you want 60 min This is hardly even a recipe, but it is delicious. INGREDIENTS Any root vegetables will do. As a base, I usually stick with: Beets Potatoes Yams Carrots Seasoning: Salt Garlic Powder Cumin Paprika Thyme Black pepper Tahini sauce: Tahini Lemon juice Water Salt But there's nothing stopping you from using like.. parsnips or turnips or rutabagas or other vegetables I never really cook with because my mom didn't like them so I have had no exposure to them and never think to try them even now, three decades later. Adding chickpeas, or certain brassicas like broccoli or cauliflower are also very good! You can eat it as a side, or with a grain like rice or quinoa as a main. 1. Chop all your veggies into chunks that are roughly the same size. I would go with something bigger than dice but maybe a little smaller-or similar size to - standard ice cubes. 2. Toss them in some oil and seasoning (don't be shy with it, especially if your veggie chunks are on the bigger side. Alternatively, if you've cut them much smaller, you may need less). 3. Roast at 400F for around 45 minutes (less if they're smaller pieces). When you can pierce em with a fork, they're ready. 4. Serve with tahini lemon sauce. *Sprinkle seasonings from higher up, like a foot or so above the food instead of a couple of inches. The granules disperse further when falling from higher up which ensures a more even distribution, and you don't get clumps of seasoning on some bits and none on others. *To make the tahini sauce, there's not really a "right" way to make it. The main thing is that you should have more tahini than anything else, but the rest is all preference. *You can try adding garlic (roasted garlic would be a delight) or cumin if you feel like changing it up. Also, a little goes a long way. You can drizzle it over your veggies if you like, but I prefer to dip.

Recently read and thoroughly enjoyed Matthieu Bonhomme's two Lucky Luke books. I'm hoping they'll do more at some point. In the meantime, looking forward to digging into more of their comic work!
