So they were tagged with the codename- chicago, and from that point on the name couldn't be changed. Because otherwise it would break all the drivers.

It's incredible how much one can miss the smaller QoL updates newer macOS versions can bring.

I tried installing Big Sur 11.x for shits and giggles on my M1 MBA, and, of course everything somewhat works, but there are so many little things that I started missing, I had to update back to Sequoia.
