Soon be setting off for today's Cask Marque visits and a couple of cellars to audit. Quick reminder, especially as we're coming into the festive season, don't use the cellar as an extra fridge. Ta.

I've put together a glossary of over 800 useful terms in wine and wine service with concise explanations for somms, students of wine and anyone who works in wine.

Hope they're handy! Enjoy

An excellent article on the demise of a classic and historical British beer from @petebrownbeer.bsky.social in @pelliclemag.bsky.social . The mighty Worthington White Shield IPA.

Valuable read for students of beer!
People typically talk about “American” or “Pacific Northwest” hops as if they’re a monolith. Yet Oregon’s Willamette Valley, on the wet side of the Cascades, is vastly different than the arid Yakima Valley. The hops grown there are different, too.

Dating breweries, like counting them, is an act of interpretation. Once a brewery’s age passes into the centuries, interruptions are certain. Sometimes breweries take advantage of those gaps to push their founding date backward. So let’s take the most famous date of all, Weihenstephan and 1040 CE.

Strong owl game
I'm sorry, I can't resist a shameless Superb Owl post. The ferruginous pygmy owl is the most superb owl of all, because he is only as tall as a (very round) house sparrow. I met this one in Cancún, Mexico back in August

If you're in London, please consider visiting or ordering from Sambal Shiok, who've been hit with road works (causing a 50% loss in guests) after barely surviving the cost of living nightmare. I had lunch there recently and it was amazing. They also take reservations if you want to be sure of a seat
