Cook onions and 4 smashed cloves garlic v slow in oil until translucent NOT burnt.
Add salt, sugar pepper and oregano and two tins of chopped tomatoes plus generous splash of clear booze (I use vermouth). Low simmer for an hour or two. I add fish sauce for depth and a big knob of butter at end
