Peeled raw onions squashed into a jar and then a hot spiced brine is poured over to completely submerge the onions.
Lid on for a month or so and they will be done

Smells lovely - fruity and warm rather than vinegary and sharp.
These are cooked pickled shallots so need only 24 hours of so to be ready to eat.
Day five of #canuary is done!!!

After that they need to drip for a couple of hours before being sliced into slabs and cooked in the whey till squeaky.
Then into salted brine for storage in the fridge.

Today I am canning up the stock from a smoked ham hock that has been in the slow cooker overnight - so hoping the kitchen at least will be above frozen!!!
