Got 4 pounds of pork butt cubed up & marinating for my 2 day pork dish (not carnitas but similar). Got another pound of pork trimmings for the base of a Sunday sauce. I need to make 4 pounds of ricotta 50/50 meatballs tomorrow too. Some will get frozen. Some for the Sunday sauce. Workin hard.
