I do know that seeking wines that are only made from "the most raisined grapes" within a vineyard is a slippery slope that can quickly lead to the madness that is Tokaji Eszencia. So I am treading carefully!

Nooooo! What about Gewürtztraminer Sélection de Grains Nobles? Tokaji Eszencia? Sauternes?
I completely agree that cloying, off-dry wines are bloody awful. But a proper dessert wine is an astonishing experience. A good Pedro Ximenéz is like a Christmas pudding in a glass.

Ai niin ja Tokaji Eszencia tietty, mutta se on hädin tuskin viiniä kun siinä on niin paljon sokeria ettei hiivat pysty kauheasti siitä edes muuttamaan alkoholiksi, mutta se on teknisesti myös kauppaviini. Mutta siitä joutuu maksamaan useita satoja euroja / pullo, niin ei ehkä ole relevantti tähän.
