Deboned skin-on chicken thigh marinated in soy, garlic, and michu. Batter with salt and white pepper mixed in and coated in coarse sweet potatoe starch. Twice fried with basil, chili and pepper sprinkle.

Chicken Parmesan
Quick no bake version. Chicken breast breaded with crumbs and herbs and air fried. Sauce made with homegrown tomatoes. Parmesan, grated and hand torched.

Oxtail Dirty Rice

Oxtail stewed in Creole spices, chilled and shredded. Onion, shallot, celerys, peppers, carrots, mushrooms, and kales sauteed and cooked with jasmine rice in broth. Oxtail in at the end and mixed thoroughly. Topped with gravy made from the oxtail stew. Absolutely divine.

蒼蠅頭 Fly's Crown 🇹🇼

A popular Taiwanese stir fry using black soybeans, chives, and minced meat. Garlic and chili in the wok until fragrant. Ground pork then soybean paste when meat is mostly cooked. I added tomato and mushroom for mild acidity and texture. Finally add chives and a few quick tosses.

Fried Enoki

Enoki mushroom sliced into slabs, coated in a garlic and paprika batter, fried and finished with tonkatsu sauce, sea salt, and chives.

Miso Glazed Cod

Atlantic cod marinated in sake, mirin, and a white and red miso blend for 3 days, then broiled until slightly charred. An easy recipe, just requires planning ahead.

Six Mushroom Hot and Sour Soup

Fry tomatoes until softened. Stir in the mushrooms (shitaki, winter, enoki, king oyster, straw, wood ear) until fragrant. Add water, daikon, bamboo, tofu and bring to boil. Season with soy, black vinegar, white/black pepper, huajiao. Finally add egg slurry to thicken

Hattie B's. Definitely the busiest one of the bunch, even with multiple locations. Finally, bone-in chicken! The breading is crispy and meat tender, but the seasoning is noticeably less flavorful than the others. It feels more catered to the masses, but that's not necessarily a bad thing.

Bolton's. Regulars say the fish is even better than the chicken, so fish it is. Dry seasoning instead of sauced, great flavor and the fish is flaky and firm. Easily the spiciest of the ones I've tried so far.
