Made "Begun Pora" this AM. Charred eggplant and tomatoes, raw red onion, garlic, green chilis, lime juice, green stuff.

Quite good

Hey there. Don't suppose that you can guess the frying time / temperature for the eggplant in the following dish. I'm quite sure that this makes all the difference and I'd prefer not to screw it up multiple time). I checked the "Persia" cookbook but didn't see a good match

@naomiduguid.bsky.social Partying in Lisbon and some ended up in a Georgian restaurant tonight. Enjoyed a bunch of lovely food, but for me the highlites were a lovely assortment of pkhali (the green bean one was especially good), some fermented pickle, a fried eggplant salad, and pork cheeks.

if you like dosa, you might also consider playing around with paniyaram. beat up an egg. Mix in a glug of salsa or some chutney or some veg. The whisk in a cup or so of idli batter or dosa batter. Then fry this all up into little balls. Really good
