Probably two reasons:
1) Logistics of keeping this flat in my fridge vs in a bucket (which I've done before)
2) Hoping for very crispy skin and more flavor from the rub vs risk of diluting flavor.

Aww. I made the chicken salad yesterday and my wife was just at the bakery. Both of us exhausted today so this was super low effort for a pretty good return!

I'm going to give that one. Does not sound appealing. Thick slice of ham and a few HB eggs rough chopped in food processor and then combined with sausage in a single mixture.

There were a few similar hesitations about it. They got whizzed up with the other proteins. You would not know they were part of it if not told, but added to the dish.

We're fans of the polenta version with a sheet that layers well. But my sister already had a separate polenta dish planned and asked for a noodle version 🤷

I made lasagna with those once and it was good, but she was making this a few days ahead and freezing for travel, and she didn't trust those

Personally I've found the IP slow cooker setting worthless for reheating. Use saute or even briefly bring up to pressure then keep warm.

My sister and BIL have a farmette outside Asheville. They've had a couple cows a year they graze and have processed. They donate a lot to their church foodbank and stockpile the rest. I believe this was Daisy or Lizzie. Last year they had Moulder and Scully.
