It's a versatile dish and easy technique: use mushrooms or not; Mozz instead of Fontia; I used Pinot Grifio but any dry white wine good, etc. good luck, have fun

Broke from the news for food videos and kept seeing "Chicken Valdostana" which was new to me. Essentially chicken cutlets with prosciutto, mushrooms, and fontina cheese in a buttery wine sauce. Took ideas from 3 different vids and freestyled it, adding a squirt of lemon. Quite good actually. 🍽️🍜

Starting off 2026 with a Harvest Hash. Sweet potato, onion, Brussels, honeycrisp apple, local blueberry maple sausage, chopped pecans and craisins. Plated on crumbled cornbread and a topped with a couple eggs and a balsamic, Dijon, maple dressing 🍽️🍜

Brisket Burnt Ends made from previously smoked & frozen brisket points. Added rub and brown sugar, then sauced and smoked another couple hours. Totally Meat Candy.

Friend was gifted fancy pears and got two orders by mistake. We benefitted and braised in wine, OJ, Star Anise among other things and served with vanilla ice cream. 🍽️🍜

Here's the recipe for the Vegan soup. And in true NYT Cooking comment section fashion, we swapped in Fennel Bulb for Onions as one of our guest can't tolerate onions.

We skipped town right after Christmas for a few days, so we kept that evening simple with Brisket and Butternut Squash Chili (see down page) and a Vegan Chickpea Noodle Soup. Both were super tasty. Recipe for the Vegan 🌱 soup in the comments. 🍽️🍜

In 2025 I rode solo on my gravel bike for 270 mi of the Great Allegheny Passage and the C&O Canal in Pennsylvania and Maryland. I also sold our 2nd car and got a Cargo Bike.

I got Kid #1 making a charcuterie platter and Kid #2 making cocktails. They're both off the payroll and in solid relationships with nice people. Life is pretty good.

A great thing about having adult kids is they can staff the hime bar. I had a Spiced Pear Martini and an Espresso Martini with Bourbon Cream. 🍸 Followed by game of "Taboo"
