Ooh, I'd be interested to see how this compares to the Fourier series interpolant (which would be periodic by construction, analytic/C-∞, and fairly straightforward to compute for evenly-spaced control points e.g. using FFT)

Yes! This is a hill I've been trying to die on for years now, but nobody has ever cared enough to even really disagree on it...
It's the inner product, it's symmetric rather than antisymmetric, it's the real part of exp(iθ)!
Both are mere shadows of the complex exponential of course, but cos>>sin

I'd be genuinely interested to see that, spent long enough figuring out how to comb the hairy ball theorem for my own projects I'd love to see how others approach it
