had a glass or two of Kim Crawford Sauvignon Blanc yesterday and was struck by how similar it is. does big mass produced wine get a lot of its flavour from yeast fermentation byproducts? I'd always assumed it's more about fruit character
sampling a bit that didn't fit in a bottle. it's pretty good? a bit higher acid than I'd planned. some bad yeast flavour that should fade but mostly tastes like blackberry juice if a few tomatoes snuck into the juicer.

this worked better than I'd expected. very clear and a pretty good yield. doesn't taste as good as the non-filtered stuff.

froze the sludge from the bottom of the onggi. should separate out cleanly while thawing. probably will distill the result
