Today's Loaf Recipe:
- 80% Bread Flour
- 15% Spelt Flour
- 5% Dark Rye Flour
- 7 grams of yeast
- 4 grams of sea salt
- 85% Hydration
1. Autolyse 30 minutes.
2. Stretch and Fold every 30 minutes,4 hours.
3. Bake at 450°F convection mode for 1 hour, covering for the first half of the baking time.
