This was a small Lutheran school called Leif Ericson Day School in what was once a very Scandinavian part of Brooklyn (mostly Irish and Italian when we went there though.) My mom, 0% Italian, contributed her stuffed shells Florentine.
1 box (jumbo) pasta shells 1½ Ibs. ground beef 1 lb. shredded mozzarella (4 cups) 2 boxes chopped spinach, well drained salt & pepper, to taste 15½ oz. can Italian sliced 5 cloves garlic, minced tomatoes, (in puree) 2 Tosps. minced onion 15½ ozs. spaghetti sauce STUFFED SHELLS FLORENTINE -Dorothea Nissen Phillips 2 egg oil Preheat oven to 375°. Boil pasta shells per box directions (al dente). Drain and cool. Brown ground beef and drain off fat. Add minced garlic, onion, salt and pepper; mix well. Add well drained spinach (squeeze cooked spinach between cheesecloth or towels to remove excess moisture.) Add egg and 2 cups (1/2) of the shredded mozzarella and mix well. Oil a 9 x 13" pan lightly. Mix sliced tomatoes with puree (if tomatoes are in water; drain first) and spaghetti sauce. Cover bottom of pan with 1/4 of sauce and tomato mix. Fill each shell with meat-spinach mixture and place in pan in single layer. Cover with remaining tomato sauce mix. Sprinkle with remaining 2 cups mozzarella. Bake 375° for about 30 minutes or until cheese is melted and lightly brown. (Serves: about 4-5; approximately 20 shells per box) -16-

Photo from a recipe book reading LIVER-RICE CASSEROLE 3 cups cooked rice 2½ cups milk 1 egg, beaten 2 Tbsps. butter 1 med. onion, chopped 1 tsp. salt ½ tsp. white pepper ½ tsp. ground marjoram 1 cup raisins 1 lb. liver, sliced 4 Tosps. dark corn syrup Mix together rice and milk, add the egg. Heat butter in a frying pan, brown the onion in it and add to the rice-milk mixture. Stir in syrup, salt, pepper, marjoram and raisins. Put the liver through a meat chopper (this is easier if the liver is partly frozen) using a coarse blade or use a sharp knife to chop it very fine. Stir liver into rice mixture and pour the whole into a buttered 2 quart casserole. Bake in 350° for 1 hour or until casserole is set. Serve hot with melted butter and lingonberries or cranberry sauce. Note: This is a year round favorite in Finland, always served at Christmas, even non-liver lovers like it.

Re: Recipes Dear Tavie I improvise when I cook but generally the basic recipes are Tuna casserole I lb of wide noodles 2 cans cream of mushroom soup with 1/2 cup milk for both 2 cans while albacore Tuna in water 1 can mushrooms or a box of fresh while mushrooms 1 can of Black olive slices 1 large bag of potato chips (light salt is best) cook noodles ( Not too soft ). Combine all other ingredients except potato chips. Put noodles in a large greased casserole pan ; pour combined ingredients over noodles ,stir,. Crush potato chips and sprinkle over the top of casserole, Preheat oven to 350 deg and bake 30 minutes until topping is lightly browned, Meat loaf !/2 finely minced onions 1/2 cup plain bread crumbs 1 large egg 1 1/2 ground meat salt pepper some herbs if you like (Mrs dash or 21 salute from Trader Joe. ketchup Combine all ingredients except ketchup . Mix well and put into a loaf pan. Spread ketchup thinly on top and mark rows with a fork. Preheat oven to 325 deg and bake about an hour until juices run clear. A little improv for my Caldinho de Feijão on this chilly day. I had Ayocote Negro beans instead of black turtle beans. I had pork knuckles instead of a ham hock. I had to cook it longer. It came out delicious. Beans as always by @ranchogordo.bsky.social.

This excellent Dopey also loved my pin bag and asked me who my favorite Disney character was and when I pointed to Elliot the dragon he said “There’s room for everyone in this world” and I came very close to high-fiving him.
