This adventurous character crossed the Bristol Channel about a hundred years ago-this is perhaps where it acquired its salty tang-and most of the Caerphillies come up from Somerset now. Derby: A hard exterior-but a heart of gold. Workman-like, unpretentious and full of natural goodness and commonsense. Especially Sage Derby, of course. English Cheddar: Gorgeous and slightly nutty.
