It is a bit odd. Last batch I put in a lot more marjoram and sage. Bowl of seasoned meat was in the wine cellar for everything to mellow out. Walked into the wine cellar a while later and it smelled like weed.

This is the recipe that I started with and have played around with lately.
* 1 tablespoon brown sugar
* 2 teaspoons dried sage - more!
* 2 teaspoons salt
* 1 teaspoon ground black pepper
* ¼ teaspoon dried marjoram
* ⅛ teaspoon crushed red pepper flakes
* 1 pinch ground cloves
* 2 pounds ground pork

I thought they would have them here. Japan KFC had them when I had KFC the one and only time there when I lived in Japan in the early 90s.

I’m sure it is enough to get my NZ citizenship revoked but I don’t like Kentucky KFC but when I first had Korean fried chicken in Seoul it blew my mind.

my biscuits are probably different from most scone recipes though. I freeze butter and grate it into the flour, baking powder and salt. Chill that for a while and then add buttermilk.

Oh I assumed KFC had biscuits. I avoid KFC unless Korean. Never have like it. Popeye’s being here now is great but I didn’t actually check if they have biscuits.

Everything have had to make my own and I can’t believe I have waited 20 years to do it. Always had my mom make biscuits and gravy anytime I‘ve visited. My kids love this.

Nice. I also put marjoram in mine and I fry my sage to crispy along with some fresh chopped.

Buttermilk biscuits just out of the oven and the pork sausage gravy is nearly ready. Gotta make it all myself since you won’t find biscuits and gravy in NZ - and the biscuits concept freaks people out. Until you remind them of KFC.

Don’t know how much freedom I’ll have in Okinawa but I’m hoping to get a chance for 沖縄おば. ちゃんぽん also but I’ve had that in Tokyo when it was trendy in the 90s

I’m off to Tokyo (and Okinawa for the first time ever) from Tuesday. Not been back since end of 2022. Outside of work my target is primarily ガード下 and サラリーマン type places. Simple pleasures

All these little things add up.

In Japan for decades everyone has lamented the tragic decrease of firefly populations. Turns out coating river banks in concrete instead of muddy marshy boundaries has consequences.

And as kids we all mucked through those kinds of environments. At least I did.

Yes! Hopefully adult can make a conscious decision to do so while kids need us all to advocate on their behalf.

Was thinking recently of all the milkweed around when I was a kid but saw none last years I visited mom at my childhood home.
