Definitely forgot how much I love the alchemical nature of fermentation. This is fermented strawberry/jalapeno powder I made from the spent waste from a hot sauce I'm working on. Would otherwise go to waste, now it can also season food.

Someone I had looked up to when I was a brewer passed recently. It inspired me to return to fermentation, in the form of lactobacillus fermented hot sauce. Hoping to get something going that I can add to the Origin Trade Goods lineup.
