When Denver chef Amos Watts died suddenly in 2024 at age 43, he was just weeks away from reopening his signature small-plates restaurant, the Fifth String, in a new location off East Colfax.

His wife, Jessica McCabe, has kept Watts' dream alive and hopes to open this summer.
