Made Miso Ramen Stir Fry last night and it’s the family’s new favorite. They asked for it later this week, and Nathan is hoarding the leftovers for lunches. I am pleasantly surprised. It has all the things they claim they hate. Haha, success!

My first time making pierogies! Not as hard as I thought, and it uses up leftover mashed potatoes. They can be frozen for later and then quickly boiled for time-tight dinners. Hoping to experiment next time with different fillings.

Mixed up za’atar spice, something I have never tried, let alone cooked with. We all found out together it is delicious. My 8yo LOVES the Sumac in it better alone. Cooking is how I steel my resolve to resist the regime long term. A tasty discovery brightens the day, fuels energy, and brings strength.

Somehow I managed an Alfredo sauce that didn’t split. This is like, my twelve-ish attempt? I can hardly believe it. Again, using subs of what we had on hand went better than following the recipe strictly. Hoping someday I reach the level of talent that is “Oh, I just guess, I don’t follow a recipe”.

My son calls this Mushroom Chicken. It’s been his favorite since he was 4. His meds often make him not hungry and sadly he could only eat half last night. I will keep making it every week until we hit a night he is hungry again! My 8yo daughter cooked this one and it’s the best ever. Coincidence?
