Hiya. I make pizza 10 hours a night 7 nights a week for a small independent pizza business. Maybe I will post about that. Am only doing it for myself. I have no expectations of actually being followed by anyone..

I can make dough at any time really, but I think the reason it’s best when I start around 4am because I have fewer distractions which means fewer opportunities to make mistakes

The dough right now is at peak flavor with natural umami undertones that happen when it is allowed the proper time to ferment. Seldom does it manage to reach this point before it gets used.. Usually it is used too soon.. I will likely be the only one around to acknowledge this..

Yesterday morning, two tires on our pizza truck suddenly exploded .. woohoo! 700 bucks down the drain! Coulda been worse tho. I hope the other two aren’t planning on exploding any time soon

While it was cold, the dough was really amazing.. Then It warmed up and rained and the dough turned sorta shitty again.. Nothing really changed but the weather, tho my mood seems to somehow impact the quality of the dough as well. Made sample mini pizzas of my last 2 batches in hopes of diagnosing

Attempting to stay ahead in dough production usually results in making “just enough” .. Always need to start new batch even with fridge full of dough and uncut batch made last night on table .. Then maybe won’t have to be up til 6 am making dough on too many mornings

Am dough testing at 5:42 a.m
The dough on the far left is brand spanking new! The dough in the middle is a few hours old. These 2 doughs won’t be properly ready for use till tomorrow.
The dough on the end is possibly almost a week old and well past its prime.

There are possibly dozens of pizza making simulation games.. mostly for kids.. but are there any video games that focus primarily on dough making while simultaneously literally training the players to make pizza dough?? I’m sure that would be really exciting!!!
