One thing I love about beans vs meat, that I'm surprised people don't talk about more, is that clean up is so much easier! Beans and vegetables just don't stick to pots and pans the way meat does.

If you have a decent kitchen, a good grocery store, and time/energy, cooking vegetarian is enjoyable and yummy. I started doing it on a whim and have kept it up for five years now. I personally eat beans in maybe every other recipe, probably more if I wasn't allergic to lentils and chickpeas.
