I wonder how you could test this. Maybe have established couples create accounts on a dating app and see if they get matched up?
Agree matchmaking is hard. They probably try to match well but you still need lots of dates to succeed.

other comment is that, while resembling the 'internal principal agent misalignment' aspect of those other examples (streaming, junk food, social media-treated-as-consumption), dating sites are significantly harder than those because they're two-sided matching markets
