Large-end beef rib roast was on sale this week. I seasoned it on Fri for cooking on Sun. It's 2 ribs and 3.5lbs. I used a simple rub of salt (1), pepper (1), granulated garlic (1/4; Kirkland), dehydrated onion (1/4), crushed rosemary (1/4), and dried thyme (1/4).
I'll roast it to ~132degF. #beef

This turned out great! The skin was very crispy and meat was tender and juicy (I took it to ~163degF). I'm always amazed how #chicken breast comes alive when you use plenty of seasonings (I usually prefer drums and thigs).
