The workaround I found was that if I gave the shadcn <SelectTrigger ...> component a name property ("weekly_traffic"), with Pest I could do ->press("weekly_traffic") and then use the plugin's ->keys("weekly_traffic", ['ArrowDown', 'Enter']) method to navigate through it.
