Tonight is dress rehearsal before 4 performances in 2 days. He came home yesterday saying stage crew won’t take a bow afterward, but I bought him flowers anyway (shh).

I really do hate this framing. "Expertise" in conventional usage includes the ability to determine the accuracy of gathered information or the suitability of proposed directions, things AI absolutely cannot do and skillsets it absolutely can't substitute.

I have high hopes for this batch, or at least high curiosity. I wonder how using unfiltered juice will impact the final product. Postulating it’ll require racking to secondary for clarification alone. Also, how will it taste with the tannins? Can’t wait to try the body/mouth feel

Someone referred to adding tannin to their cider to make it not just a dry white wine and now I can’t get the comparison out of my head. Definitely made some things click for me, procedurally.

Also apparently traditional cider is still, or practically, and that makes so much sense/is a relief
