I grew up a vegetarian, so turkey was never part of our Thanksgiving day plans.
I eventually convinced my mom to make my favorite dish on Thanksgiving - cheese enchiladas 😁
Since we lost my mom this year, I decided to make them myself.
Came out pretty good 👍
