"Professor" - Inappropriate unless the person is a Full Professor®.

"Doctor" - Inappropriate unless the person holds a PhD or the equivalent. (JDs and MDs don't count.)

"Mr./Mrs./Ms." - Always inappropriate.

"Hey you" - Always appropriate.
