Grew up with this recipe (written down for me by my Mum) - we called it "Silverbeet". Still make it sometimes. Can also work with tofu mince or no mince for vege option. I usually just do enough rice for the number of people. Cooking brown rice takes ages. 1 lot is a very specific quantity...
Silverbeet/Rice Dish (2-3 persons) Ingredients: 200ml brown calrose medium grain rice 1 lot of silverbeet 1 onion 300-400 g mince 40-50 g butter 1 eggs half cup of milk- 13/4 cup of grated cheese pepper, salt, soy sauce. Cook rice as per instruction on packaging. Cut silverbeet in and wash the pieces in water. Put them in large pan and blanch (steam 2-3 minutes), then drain in colander (no extra water needed). Cut onion. Melt butter in pan and saute onion. Add mince, sprinkle with pepper and fry until brown, add some soy sauce, stir and cover on low heat. Crack egg in bowl and mix the yolk and egg white with some pepper and salt. Mix in milk and then grated cheese. Cut the drained silverbeet in small pieces and add to egg mixture and stir. Add cooked rice to mince and onion and stir. Add this mixture to silverbeet and stir. Put in shallow oven dish, uncovered, and put in pre-heated oven, 30 minutes on 180°C
