I went with the smooth polished, precisely because I make bread, etc., and need to be able to knead on the countertop without embedding stuff in the damn stone.

My grandmother's house was like that. It was an inn in the 1800's, and the stairs up from the front door were nearly straight up. No railing on the landings, either.
