#OmniFocus 4.7 (currently in beta) introduces Mutually Exclusive tags.

For example, let's say you have a Communications tag group that includes Email, Phone & Message tags. If you add an Email tag to an action that's tagged with Phone, the Phone tag will automatically be removed.
