Steinrock's Statistics with R is available used or Kindle for <$31. Also discipline-nonspecific. The psych-specific books tend to be much more expensive in my experience and the ones I've looked at don't spend as much time on sampling distributions.

Two worth considering from open access resources:

They're pretty discipline-generic. Rice's comes with a bunch of useful online resources like a sampling distribution simulator.

Speaking as the spouse of an AD military member - we have AT LEAST 100 SNAP/WIC recipients just at my base alone (I can name at least a dozen personally), and the base is relatively small compared to many others.
