Not at all stodgy, it's lovely! It's usually served with a sauce of cherries and with salty pork belly. It's a lovely combination (and there's not enough sweet + salty combinations in modern recipes anyway, so doubly glad this has survived).

Potatober #25: Today may be international pasta day, but pasta is basically Nudeln, and Nudeln include southern German Schupfnudeln: a delicious noodle-dumpling-hybrid that nowadays contains potatoes. I pan fry them, mix them with sauerkraut and other ingredients, then bake them. Better than gnocci!
