Today marks one year on this keto journey. I didn't take a before photo, but I have a pic of myself on 8/7/24 and one I took 8/31/25.

I'm down 67 pounds and I feel immortal.

Dinner tonight is a Spam & egg salad with dill pickles and celery. I divided it into 3 servings and put 1 serving over 3 fistfuls of spring greens and a medium tomato.

The pantry/fridge/freezer cleanout continues.

Last night I made a sauce with 2 cans of minced clams, the whites of 4 aging green onions, oyster mushrooms, green beans, butter, garlic, and white wine vinegar. Served it over summer squash zoodles. I have a serving of clam sauce left over.

I blanched a head of cabbage, shredded, to make my "pasta". I divided the cabbage into six containers, topped them with the stew, and finished with grated pecorino romano.

Curried eggs with mushrooms and green beans

1 tbsp coconut oil
2.5 oz. blue oyster mushrooms, cut in bite-sized pieces
1/3 cup cut green beans
1T butter
1 tsp curry powder
Salt, pepper, cayenne to taste
3 eggs, beaten
Sriracha sauce

I bought this thinking it was a sardine I hadn't tried, but it's farmed salmon just like it says on the can

Tasty on spring greens and an avocado using the oil in the can as my dressing

I season the diced avocado with s&p and garlic & onion powders

Today's lunch

Boiled Dinner
3 servings

14 oz. Kielbasa
3 medium turnips
12 petite carrots
1/2 of small cabbage

Cover turnips & carrots in water. Season with s and p

Layer on kielbasa, then cabbage. Season again

Bring to a boil, cover, and simmer for 15 mins

Drizzle veggies with olive oil

Add diced tomatoes & chipotle peppers with sauce

Stir dry spices and bay leaf into the sauce--skip cayenne & chipotle peppers for less heat

Add drained chickpeas, corn, ground beef, and kielbasa

Stir it all together

Cover and set pot to simmer at least 15 minutes 5/5

Brown beef

Use slotted spoon to remove from drippings

Heat drippings to boil off water

Sauté onions in drippings--don't worry about caramelization in pan

When translucent, add carrots, celery, and garlic

Before garlic burns, add whole tomatoes with juice and use utensil to break them up 4/5

1 tsp cumin
1 tsp basil

Chili with Kielbasa, Chipotle Peppers, and Chickpeas
8 servings

2 lbs. ground beef
14 oz. kielbasa--sliced into discs
28 oz. can whole peeled tomatoes
14.5 oz. can diced tomatoes
7 oz. can chipotle peppers in adobo sauce*
16 oz. can chickpeas--drained

Adding a green vegetable makes it feel more like a meal for me

I'm doubt the Vanilla Fig Balsamic Vinegar I used is keto,

- Cook naked mushrooms in dry skillet to brown on at least two sides
- Add coconut oil and garlic to pan with mushrooms, reduce heat a bit (I chose coconut oil because pan was too hot for butter or EVOO)
