From what I understand some varieties are just more spicy than others, but also temperature has a lot to do with it. Hotter weather = hotter radishes. Haven't tried it myself, but I've heard peeling them takes a lot of the bite out when they come out of the garden too spicy for your liking.

I've always used a cheap watercolor brush to hand pollinate my peppers. IIRC the flowers can self pollinate, but you get more/healthier seed if you cross different plants of the same variety.
