Under the Autumn Strangely is so cool. It's basically an unofficial Over the Garden Wall RPG and it rocks.

You harvest all of them when the leaves are half-brown (usually late summer/early fall), then let them cure for a couple weeks and eat as you please! Make sure to snip the scapes/buds before they flower, since they draw energy from the bulbs and make them smaller.

I'm in zone 7 too. Garlic can be pretty hardy if you use local varieties. I've planted it well past first frost and it survived the winter.
