In an oven pan, put two pounds of of tomatoes or tomatillos or a mix , half a sliced onion, five garlic cloves in husk and if using, fresh jalapeños or serranos or habaneros. Or you can instead use toasted dry árbol. Remove garlic when roasted. Let everything else char, and blend, process or mash.
