*Anywhere* making their own ketchup is just hubris imo. Never going to forget this passage from the late great Anthony Bourdain’s “Appetites” cookbook.

Speaking of which: Do not put "house-made chutney" on my hamburger. Please. Let ketchup do its job. And don't make "house-made ketchup" either. Why would you do that? If it's not broken, as they say, why the fuck would you fix it? Is your ketchup really better than the stuff that's been our trusty condiment companion for decades? A waiter asks me if I'd like some "house-made" ketchup, and I tense up, anticipating further blows: Will Mumford and Sons suddenly emerge from the kitchen and begin playing tableside?
Mayonnaise? Maybe, if applied judiciously, You don't want that burger shooting out from between the buns and landing on your genitals. It's a tough call. How much do you really like may-onnaise? god I feel this. Someone at some point wired a bunch of outlets and switches in my place with creative, shifting interpretations of whether the black wire should be hot or neutral. Also the back patio light switch controls the basement light.
