I do have to be careful transferring them! But they’re hardy enough they haven’t torn yet, I use this dough recipe and it’s my favourite so far

I just squished the dough together for the seal! Mine swell in the pan too but I just gently squish them down, although I use this tactic for the filling (I find they don’t release as much water with this method)

Thank you! It’s gozleme :) similar flavours but you’re right different pastry, this is much doughier than filo (but still lovely and thin)
