I like to proof them in a cold oven with a pan of hot water underneath to give humidity and warmth.

The most.. struggle.. so far has been with pockets of shortening melting between my fingers while I'm trying to crimp the edges of the crust and making spots "wet"

The 🎃 pie was made a week or so ago and was completely from scratch (canned pumpkin was the only cheating).
The apple pie was last night and I used canned apple pie filling for this one. Both came out very well though ❤️
