After about 30 hours the fungus is well established and producing enough heat to keep itself warm. Probably about a day until the tempeh is done.

@Nichelle I’ve done it before, you can scroll back in my posts if you want a sneak peek. It’s pretty easy, and it’s great to have full control over what goes in it.

20 hours later, the tempeh is showing some nice fungal growth. It’s also got some condensation inside the plastic, which isn’t ideal—the danger of a PNW ferment. Let’s hope it dries out.

@therealahall it’s easier than you’d think! Basically you just need to buy the spores somewhere, everything after that is waiting and a bit of temperature control.
