So I’ll try to cultivate the shaggy manes. First mycelium agar looks quite clean and robust! 🍄📷🧫

So @grassflu.bsky.social inspired me to try making gözleme 🙏
I did a vegan version with tofu and shaggy mane mushrooms that I’ve been picking off our wine barrel planters 😄 Turned out so good!
Gözlemes stacked on a wide plate. They look like neatly wrapped rectangles of thin sheets of boiled dough that’s crisped on both sides to golden brown on a grill. Gözleme in the pan, already flipped to show the top side cooked. A rolled out thin sheet of dough, with filling of spinach already spread out in the middle.

Did some #sourdough #bread #baking comparing scoring styles.
A half-baked bread loaf on a clay tray, with a whole-length side scoring that has allowed the crust to peel upwards and form an attractive ridge. Finally a decent lift in the bread, this angle of the cut worked well 😮‍💨 Closer look at the finished bread. Dusted well baked loaf with large golden brown scoring scar and an attractive crust ridge sticking out. Two loaves from the same batch side by side, showing the difference there scoring makes on the final loaf. Left one is darker, with three top scores and a very low side scoring that made the dough expand in a more sideways direction. On the right, the single lengthwise score at about 45 degree angle allowed the dough to peel off and expand upwards, protected by the ridge of the crust.
