Pay a good wage. Chuck the tipping. Include all costs *and* tax in the listed price so your customers can easily know what to expect and can focus instead on the food and experience. Design your site to be inviting.

I know the pattern 5-10- would suggest a $20 bagel joke instead of $50, but I think we should future-proof it to last more than one generation. We should be able to laugh with our grandkids about overly expensive bagels instead of crying about how it used to be funny.
